Morning Glory Muffins

On allrecipes.com these are called Easy Morning Glory Muffins. I decided to take out the easy b/c it does call for quite a few ingredients and it involved digging out my food processor from the recesses of my cupboard. You could hand-chop, but I'm not very thorough at that method. These are VERY GOOD and the bonus is, they're good for you. I've felt good about giving Sophie one for breakfast every morning. They call for one cup of veg. oil but I substituted 3/4 cup plain yogurt and 1/4 cup veg. oil and they're not the least bit dry. VERY YUMMY, buh-lieve me!

Each muffin is 4 WW points.
INGREDIENTS:
2 cups all-purpose flour
1 1/4 cups white sugar I used only 1 cup sugar b/c my coconut was sweetened. I think I'll try it w/ only 3/4 cup sugar next time!
2 teaspoons baking soda
2 teaspoons ground cinnamon
1/4 teaspoon salt
2 cups shredded carrots
1/2 cup raisins
1/2 cup chopped walnuts
1/2 cup unsweetened flaked
coconut My coconut was the sweetened kind
1 apple - peeled, cored and
shredded
3 eggs
1 cup vegetable oil
2 teaspoons vanilla extract
DIRECTIONS:

Preheat oven to 350 degrees F (175 degrees C). Grease 12 muffin cups, or line with paper muffin liners. I actually made TWENTY-FOUR muffins out of this recipe!

In a large bowl, mix together flour, sugar, baking soda, cinnamon, and salt. Stir in the carrot, raisins, nuts, coconut, and apple.

In a separate bowl, beat together eggs, oil (I used 3/4 plain yogurt and 1/4 veg. oil), and vanilla. Stir egg mixture into the carrot/flour mixture, just until moistened. Scoop batter into prepared muffin cups.
4.
Bake in preheated oven for 20 minutes, until a toothpick inserted into center of a muffin comes out clean. Mine took 25 min.
